Since most granolas in the grocery stores these days are loaded with sugar and preservatives I decided to make my own. Enjoy this recipe and be creative with what you can eat this with!
Ingredients
1 cup raw pecans
1 cup raw walnuts
1/2 cup to 1 cup unsweetened coconut flakes (optional)
1/2 teaspoon cinnamon
1/2 tsp Himalayan pink salt
1 Tablespoon raw honey
1 Tablespoon Grade B maple syrup
1 Tablespoon coconut oil
1 cup or 4 ounces organic dried fruit WITHOUT any oils added (optional)
Instructions
Preheat oven to 350 degrees.
Place nuts in a food processor bowl. Pulse until mixture is a chunky consistency or coarsely chop with a sharp knife.
Mix honey, syrup and coconut oil in small bowl and microwave 15 seconds or until just melted together.
Add honey mixture to nuts and mix thoroughly.
Spread mixture on a cookie sheet lined with parchment paper, and bake for 12-15 minutes or until golden brown, stirring occasionally. May need to use 2 baking pans.
Mix in dried fruit now if you choose to.
Let cool for 20 minutes. Place in airtight container after crumbling. Enjoy mixed in Greek yogurt or with some fresh fruit or it’s really yummy plain!
